Quick Pancake Recipe with Endless Possibilities
Perfect for a Sunday brunch with friends, a late breakfast after fasting (when you want to boost your body with good fats and protein), or as an addition to your picnic with whatever toppings you prefer — this is your go-to pancake recipe!
Not only is this recipe healthy (no added sugars) and quick to prepare, but there’s also literally no limit to what you can add to it! You can swap out the toppings and also the flour you use in the pancake mix.
Today, being Sunday, I was in the mood for something savory. I literally just checked what we had at home and ended up creating a really delicious combination!
WHAT YOU NEED
EQUIPMENT / TOOLS
Blender
Measuring cups and spoons
Frying pan
PANCAKE BASE RECIPE (Makes roughly 3 pancakes)
2 tbsp Hemp powder
2 dl Rice flour
2 dl Water
2 Eggs
Pinch of salt
Coconut oil for frying
TOPPINGS
Mâche salad
1/2 Avocado
1 Tomato
1/2 dl Crème fraîche
Olive oil
Salt
Pepper
Roasted almonds
HOW TO MAKE IT
In a blender, combine the water, eggs, rice flour, salt, and hemp powder. Blend until smooth.
Heat a frying pan over medium-high heat and add a small amount of coconut oil.
Once the pan is hot, reduce the heat slightly and pour about 1 dl of the pancake batter into the pan.
Cook until the pancake is golden brown on the bottom, then flip and cook the other side until golden brown as well.
Once the pancake is ready add your toppings and ENJOY!!!
