COCONUT BERRY CHIA SMOOTHIE WITH HOMEMADE GRANOLA

Inspired by the beautiful "Kasa Kasa" brekky at Greenpeace Inn in Sri Lanka (where we stayed in January) and the beautiful layered brekkies by Green Kitchen Stories yesterday I created a similar "jar-brekkie" based on what I could find at my local fruit shop here in Portugal.

Yesterday we served this breakfast at our Pop Up Yoga & Brunch event at Óla Onda Guesthouse here in Ericeira. 

 

WHAT YOU NEED

- Coconut Cream

- Frozen Bananas

- Chia Seeds

- Fresh Strawberries

- Fresh Pineapple 

- Frozen berries (I used a forest fruit mix but any berries such as raspberries, blueberries or strawberries are good!)

- Oat Milk 

- Homemade Granola ( Oats, cinnamon, Coconut Oil, Quinoa Puffs, Yellow and Brown Raisins, Shaved Almonds and Coconut chips)

 

WHAT ELSE YOU NEED

A good blender

A nice glass jar to serve in (or a really nice bowl!)

2 smaller bowls for preparation

A couple of spoons

HOW TO MAKE IT

This "brekkie in a jar has 4 layers", freshly chopped fruit at the bottom, a chia layer, a smoothie layer and a topping layer. Prepare each one in separate bowls, glasses or containers. 

 

THE FRUIT LAYER

Cut the fresh strawberries and pineapple into small squares (about 1 cm) and place in a bowl. 

 

THE CHIA LAYER

On the night before (or at least 45 min before your breakfast moment) - soak chia seeds in fresh tap water. 

2 Tablespoons of chia seeds for a normal sized glass of water is usually good enough. The chia will soak up the water and turn into a jelly like and gooey texture! Remember to stir the chia so it doesn't turn into chia balls!

Take the soaked chia and mix it with 2 Tablespoons of Coconut Cream, or even more if you want to have even more coconut flavour! 

 

THE SMOOTHIE LAYER

Put the frozen berries (about a cup) and the frozen bananas (about a cup) in the blender. Pour over about a cup of oat milk and blend! 

NOTE! Be careful when putting frozen fruit in the blender, let it defrost a bit before, otherwise you might break the blender..

 

THE TOPPING LAYER

I made a homemade granola to top it up, along with some bee pollen!

Turn your oven to 175 C.

Mix oats, cinnamon, melted coconut oil and a bit of water In a big bowl. Spread the oats over an oven tray (use baking paper or coconut oil on the tray to not burn!).

Every once in a while take the granola out of the oven and stir the oats around so they get golden on all sides. 

When you see that the granola is turning more golden and has about 5 minutes left add the shaved almonds and coconut flakes (these will easily burn if you put them in the beginning).

Once the granola is done and have cooled down add the raisins and quinoa puffs!

 

THE MAKING

Now you have all four layers ready for decoration!

Place a 2 cm layer of the fruits in the bottom of your jar, add the chia layer, the smoothie layer and lastly the topping layer!!
