WARMING WINTERY OVERNIGHT OATS WITH MANDARIN & COCONUT

WARM BREAKFAST FOR COLD DAYS

Here in Sweden the dark hours are many compared to the light ones right now. As much as I love smoothie bowls, chia puddings and other “colder” breakfasts, in winter I make an effort to make more “warming breakfast” like overnight oats, pancakes and different kinds of egg dishes.

The last couple of days I’ve been making warming overnight oats of which I usually make a huge batch so it lasts for several days. By making a bigger batch and storing it in the fridge, it’s a super quick breakfast which you only need to heat up and serve with toppings! I don’t usually measure the quantity of the ingredients, I just throw it in there, but I’ve done my best to give you the proportions below. Just know that it can’t really go wrong so feel free to add more or less of something!

WHAT YOU NEED (2 servings)

2 Cups Oats

1 Tbs Chia Seeds

1 Tbs Sunflower seeds

1 Pinch of Salt

1 Tsp ground turmeric

1 Tsp ground ginger

1 Tsp ground Cinnamon

1 Handfull of yellow (or brown!) Raisins

1-2 Cups of water to cover the oat mix

1 Tsb Ghee or Coconut oil

TOPPINGS

1 Cup Coconut Cream

2 Tsp Grated Coconut

1 Mandarin

1 Tsp Roasted Whole Hazelnuts

1 Tsb Roasted Almonds

3 Tsp Maple Syrup

1 Tsp Roasted Sesame Seeds

HOW TO:

The night before (or at least 1 hr before) place the oats, chia seeds, sunflower seeds, salt, raisins and spices in a big bowl. Pour over water and stir until it becomes a moist blend, not to dry not to watery. Store in the fridge overnight (or for at least an hour if you’re preparing it the same day).

The next day place and heat up coconut oil or ghee (clarified butter) in a pot. Once it’s melted place your overnight oat blend in too and stir as you warm it up, add a bit more water if its too dry.. Serve in a nice bowl and top with coconut cream first, then sprinkle the nuts and seeds, and lastly add slices of mandarin and a drizzle of Maple Syrup on the top.
