WARM GOLDEN OVERNIGHT OATS FOR COLD WINTER MORNINGS
Here’s a simple and quick overnight oats breakfast recipe I make very often myself. It’s just as perfect to enjoy at home but also to take with you on the go!
This is the “winter version” - warming and packed with good nutrients, vitamins and minerals. It also has a beautiful golden colour from turmeric (also called curcuma). This VERY orange spice is known for its anti-inflammatory and antioxidant qualities and is powerful when it comes to fight colds and inflammations.
I like to prepare the oat mix the night before and only heat it up in the morning, instead of cooking it all together (I personally don’t like when the oats get too gooey like they do in a porridge). Making it like this the night before, the juice from the figs naturally flavours the oats, the sunflower seeds sprout and the spices blend well into the oats.
WHAT YOU’LL NEED
2 dl Oats (preferably quick or instant oats as they’re softer)
3-4 Dried Figs
2 tbsp Sunflowers seeds
1 tbsp Chia seeds
1 tsp Turmeric powder
1tsp Ground Cinnamon
3-4 dl Water
TOPPINGS
1 handful Walnuts
1 tbsp Bee pollen
1-2 tbsp Maple Syrup
Oat milk or other plant-based milk
HOW TO MAKE IT
Place oats, dried figs (cut into small pieces), chia seeds, sunflower seeds, cinnamon and turmeric in a big bowl and stir well.
Pour over water so that it covers the oats and again stir well until all the spices have blended well into the mix.
Place the bowl in the fridge overnight.
Next morning take out the oats and pour in a pot and heat up on medium heat.
Place the oat mix in a beautiful bowl.
Top with walnuts, bee pollen, maple syrup and oat milk.
This recipe is super easy to change up a bit!
Other things that are yummy to put into the oats are dried raisins, raw cacao powder and pumpkin seeds. As for toppings I also love to put roasted hazelnuts and coconut flakes, fresh berries, sliced apples and banana!
