NAZA'S PORTOBELLO BURGERS
PORTOBELLO BURGERS (2 PEOPLE)
This is one of our go-to recipes when we want a quite a quick, yet delicious dinner with lots of different ingredients that together create a super flavourful combo! If you don’t have all the extra ingredients you can change it up with whatever you like!
WHAT YOU NEED
2 Portobello Mushrooms
A handful of Fresh Rosemary
2 cloves of Garlic
1 Halloumi Cheese
A handful of Rucola or other fresh green leaves
2 Bread Buns (sourdough, burger buns or other round bread of your choice)
Vegan Mayonnaise
2 Onions
2 TSB Butter
Olive oil
Salt
1 big tomato
Sweet Potato or any other potatoes of your choice
HOW TO
Marinate the portobello mushrooms in olive oil, rosemary, salt and if you like some crushed garlic. Let them marinate at least two hours before you’ll eat them.
Slice the tomato.
Cut the halloumi in thick slices and have it ready to be fried last minute so they’re melted and hot for when you serve the burgers.
Cut your sweet potatoes or potatoes either in halves or slices.
Slice your bun/bread in half.
Prepare the caramelised onion (see instructions below).
Heat your oven 220 degrees.
Place the potatoes in a tray covered in coconut oil. Add salt. Stir once in a while so the potatoes get fried on all sides. Once they have a bit of a crunchiness to them they’re ready! Take them out and cover with foil to keep them warm.
Place the mushrooms in the oven (still on 220 degrees) and let them cook for 15-20 minutes (depends on the oven). Another option is to fry the mushrooms in a frying pan.
Fry the halloumi without oil in a pan until they’re golden brown.
Now you’ve got all your ingredients ready! Place the bottom of the bun on a plate. Add the mushroom, the melted/fried halloumi pieces slice of tomato and caramelised onion. Add the upper part of the bun on top. Serve with potatoes, rucola and mayonnaise on the side. Voila!
HOW TO MAKE CARAMELIZED ONION
Slice the onions in half moons and place them in a frying pan together with 2 tsb of butter and 3 tsb of olive oil. Add a pinch of salt. Put the stove on medium heat and begin to heat the mix up. Keep stirring the onions until they get a golden brown colour and your kitchen smells like heaven :)
