GOLDEN BUCKWHEAT BREAKFAST BOWL
Today was a very windy and cold morning here in Ericeira!
Knowing myself well, and the fact that I get easily affected by this kind of weather (makes me feel ungrounded and like a raisin!) I decided to make a warm nourishing breakfast based on buckwheat, apple and yummy toppings!
This is what I came up with!
WHAT YOU NEED
boiled buckwheat (I recommend that you rinse the buckwheat with boiled water before you cook them, if possible leave them in boiled water overnight the day before)
1 apple
2 tbsp coconut sugar
1 tbsp ground cinnamon
1tsp ground turmeric
2 tbsp virgin coconut oil
a handfull of roasted pumpkin seeds
1 tbsp almond butter
1 cup of plant based milk of your choice
1 handfull of roasted coconut flakes
a saucepan
a nice bowl
someone to share it with? ;)
HOW TO
1. Warm up the coconut oil in a saucepan together with cinnamon, turmeric and coconut sugar. Let the spices and the sugar blend well with the oil.
2. Add small pieces of apple and let them simmer in the oil for 5-10 min on medium heat until soft but not too mushy!
3. Add the boiled buckwheat (can be cold or warm) to the apple mix in the saucepan. Blend well and let it stay on low heat for about 5 min.
4. Place the buckwheat/apple blend in a nice bowl and sprinkle pumpkinseeds, coconut flakes, coconut sugar (yes a little more is really nice!), almond butter and finally a dash of milk!
I honestly didn’t measure how much of each ingredient I used so the above’s an approximate measurement. Feel free to replace the seeds with some other ones, or nuts, maybe a banana instead of apple. There are ENDLESS POSSIBILITIES to how you can re-create this recipe!
