RICH PLANT-BASED PROTEIN ENERGY BARS

After a strong workout or when I’m out doing errands and need something to pick me up quickly I usually end up buying some kind of energy bar, chocolate or a bag of nuts.

Most of the time though, depending on in which country I am, if I’m in the city or the countryside I find it quite hard to find an alternative that doesn’t contain artificial sweeteners, preservatives or flavour enhancers.

I’ve been thinking for a long time that I wanted to make my own energy bars and guess what, last week I finally did!

I used my favourite nuts, protein powders, superfoods and something to glue it all together (coconut oil and dates!).

It’s a recipe which is super easy to tweak if you don't have all the ingredients so don’t get overwhelmed by my long list haha!

WHAT YOU NEED:

  • 2 Tbs Hemp powder

  • 10-15 Dates

  • 3 Tbs Dried Mulberries

  • 1 Tbs Raw Cacao Beans

  • 1 cup Roasted Hazelnuts (I like roasted much better, both for the flavour and I find it much easier to digest)

  • 2 Tsb Shelled Hemp Seeds

  • 2 Tbs Pea Protein

  • 1 Tbs Maca Powder

  • 0,5-1 Cup Cold-pressed Virign Coconut Oil

  • 1 Tsp Himalayan or Sea Salt

  • A Food-processor

  • A Plastic Container

HOW TO MAKE IT:

!. Place all the dry ingredients except for the dried mulberries and the hemp seeds in the food processor and mix.

2. Add dates and coconut oil and mix until the whole “dough” is spinning around like a giant ball and is glued together. If it’s too dry add more coconut oil.

3. Add in the mulberries and mix again.

4. Take the dough and put it into a plastic container and press it down to the bottom and out til the edges.

5. Sprinkle the hempseeds on top.

6. Put the container in the freezer for 30 min until it gets solid.

7. Take out the container, put it upside down on a cuttinboard and press at the bottom so it fall out.

8. Cut the “dough” into your desired length of bars + put them back in the container and store in the fridge. The bars can probably last for weeks unless you eat them all up before (which I tend to do:).

TIP:

If you prefer making balls do that before you put them in the freezer in the first place, roll them in hempseeds and then freeze them.
